Recently I had a super-fun opportunity to jump in the kitchen with Mary Drennen and Tiffany Davis, creators of Nourish. Nourish uses fresh food to make clean meal options that are balanced and healthy. The best part? Of course, I was thrilled to get hands-ons on with them for a little behind the scenes cooking experience. So what did we cook? BLT Chicken Salad....and yes. It is absolutely as delicious as it looks!
As we chopped, I got down to business and asked Tiffany for solutions to your biggest kitchen question: How do I eat healthy without spending all day Sunday doing food prep or eating the exact.same.thing. over and over again?
According to the Nourish gals, it's as easy as roasted chicken! You're going to roast chicken (a lot of it!), grind it, and freeze it. This simple tip is guaranteed to save you time and ignite your taste buds!
Heat oven to 400. Grease your baking dish.
drizzle olive oil on both sides of the chicken and add just a dash of salt and pepper on both sides.
Bake uncovered 25-35 minutes or until juice of chicken is no longer pink when the center of the chicken is cut
Once cooled, add the chicken breasts to a food processor (or high powered blender) and grind it up.
Freeze in deli container quarts. (Nourish recommends just saving these from your take out orders!) When you're ready to eat the chicken, allow it to thaw overnight in the fridge.
Add any of your favorite seasonings to it - Be Creative!
Ideas to get you going:
- Shredded Chicken seasoned with fresh parsley, basil, onion and garlic. Toss with fresh tomatoes, walnuts and mozzarella or fresh goat cheese for a delicious lunch bowl.
- Curry-Coconut Sauce over shredded chicken with sautéed carrots, broccoli and cauliflower
- Chicken Tacos served with black beans and avocado
